Breakfast recipe

The following recipe is from Nutritional Weight & Wellness. It makes 12 servings and is gluten-free. Let us know if you try and how you like it!


  • 12 eggs
  • 3/4 cup of heavy cream or coconut milk
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 (12 oz.) package of frozen hash browns (thawed)
  • 2 tbsp. butter
  • 10 oz. fresh or frozen spinach (thawed)
  • 6 oz. nitrate-free sausage links or patties (thawed, diced)
  • 1/2 cup shredded cheese (optional)


  1. Preheat oven to 350°F.
  2. Grease a 9×13″ pan with butter.
  3. Whisk eggs and cream in a bowl.
  4. Spread hash browns on bottom of pan.
  5. Saute spinach in butter or olive oil and layer over hash browns.
  6. Add sausage next.
  7. Pour egg mixture over sausage.
  8. Bake 45-55 minutes.
  9. Sprinkle shredded cheese over top for last 5 minutes of baking.
