Ingredients
- 12 eggs
- 3/4 cup of heavy cream or coconut milk
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (12 oz.) package of frozen hash browns (thawed)
- 2 tbsp. butter
- 10 oz. fresh or frozen spinach (thawed)
- 6 oz. nitrate-free sausage links or patties (thawed, diced)
- 1/2 cup shredded cheese (optional)
Directions
- Preheat oven to 350°F.
- Grease a 9×13″ pan with butter.
- Whisk eggs and cream in a bowl.
- Spread hash browns on bottom of pan.
- Saute spinach in butter or olive oil and layer over hash browns.
- Add sausage next.
- Pour egg mixture over sausage.
- Bake 45-55 minutes.
- Sprinkle shredded cheese over top for last 5 minutes of baking.
